These gluten-free chocolate chia seed cookies are not only super healthy but also very satisfying. Their gooey chewy chocolatey texture leaves you smiling and your cravings fulfilled. Also, indulging in these sweet treats comes with a 100% guilt free tag, which means that you can have 4 in a row like I did without punishing yourself with temporary starvation afterward. Besides being yummy in your tummy they are also full of goodness. The Chia seeds are packed with omega 3 fatty acids which keeps your heart healthy, lowers your blood pressure and keeps your cholesterol under control. The quinoa, nuts, dates and cacao are great sources of protein, fibre, iron, zinc and antioxidants; while the honey is a wonderful anti-inflammatory. The cold pressed coconut oil is all things amazing and is the perfect addition to these superfood cookies. Moreover, these cookies are gluten-free, vegan and will take you less than 30 minutes to make and bake.

 

Makes 15 cookies

Place the nuts into a food processor and grind to flour. Add all the remaining ingredients and blend till it becomes sticky cookie dough.

Preheat your oven.

Take about one tablespoon of the dough in your hands and roll into a ball. Tip- to avoid the dough from sticking to your hands, rub some coconut oil on your hands before making the balls. Place all the cookie dough balls on the baking tray and flatten them.

Bake for about 20 minutes at 120C. You can test to see if they are baked after 15 minutes by poking a cookie with a knife. If the dough sticks to the knife, it needs to further bake.

Leave them to cool for 5-10 minutes before devouring.
